Tasty and Healthy Summer Dinner



Hope you all had a wonderful long weekend!  Back to the grind today, but at least it’s a summertime grind (wink wink).

Looking for something easy, light and tastes like summer for dinner?  Give these Citrus Chicken Wraps a whirl.  We first tried them back in March and love them at my house!  Here’s the link to the original recipe:

Why I love this dish:  first of all, it’s flavorful.  The citrus marinade offsets with the guac better than I expected.  It’s full of good protein and healthy fats.  Bacon is called for but can be left out if you’re trying to cut back on those types of meat.  We sub the chipotle mayo for provolone cheese.   They are filling, without starches, so you can stay in line with the meat and veggie weight loss guideline for dinner.  Oh, and it’s easy…that’s a requirement for me!

For summer, throw the chicken on the grill and you don’t have to heat up the oven.  You can make your own guacamole, or buy it at the store, or even just use sliced avocado and tomato instead.
